What's probably responsible for increases in obesity is an excessively high carbohydrate diet, and excessively high consumption of high-calorie foods, not glutamates specifically. Blaming issues on a single food, nutrient, or group of foods has historically proven to be a bad idea. In general, it's about quantity and proportion.

For example, Americans are inundated with soy phytoestrogens if they eat processed foods, so many of which contain soy. The amount of soy we wind up eating in the US is extremely excessive. We eat more of it here than they do in Japan, where tofu and soy sauce are popular. Obviously, sunflower seeds are perfectly fine to add to your diet, if you aren't eating tons of soy in processed stuff. (Even if you are, the difference is going to be negligible). The effects of phytoestrogens on adults aren't clear, but excess quantities should probably be avoided by pregnant women, and not be given to young children.

As for proponents of raw foods...Homonids have had fire since Australopithecus, and it's a fair bet we've been doing some cooking the entire time. Our species is well-adapted, evolutionarily speaking, to eating cooked foods. Some methods of cooking are better than others, of course, and some foods are best consumed raw, but our digestive systems don't tend to handle forage the way a chimp or gorilla's would, lol. It's important to point out how long humans have been cooking over a fire, because cooking does create some compounds that have been shown to be carcinogenic...IN RATS. Rats haven't been using fire for hundreds of thousands of years, and it's entirely possible that humans are far more resistant to the carcinogens produced by cooking and open fire, than other species are.

Studies in Canada apparently revealed that heavy psi use strips potassium. The rest of it is simple logic--foods that support a healthy nervous system will be beneficial for psis, since psi use is associated with nervous system activity.
