The truth about olive oil

Well, asking the olive oil industry is probably not the best information source, but a lot of what they have to say makes sense.

In summary, frying with olive oil doesn't destroy its health benefit, and is unlikely to generate more than scant trace amounts of trans-fats unless you're heating it very hot over and over again, reusing it in a deep fryer.

It would seem that olive oil is indeed good for frying, perhaps moreso than any other oil, in terms of health.

Thanks for the warning. I've only ever used olive oil as salad dressing or for pasta because I hear that cooking with olive oil destroys its nutritional benefits.
